Featured Story – HalfTime Pizza

Peas and carrots, Evergreen and bar owners, Jordan and Pippen, gin and tonic, rainbows and unicorns. Some things in life just go well together. For this particular case, it’s pizza and beer. David, a pizza connoisseur with 20 years of pizza making has opened not one, not two, not three, but FOUR FREAKIN pizzerias in San Antonio, Texas.

David is on a quest to make the best pizza. He attends conventions, travels around the world, and learns from master chefs, in hope to master the beautiful and delicious art of making pizza at HALFTIME PIZZA.

THE ART OF PAIRING PIZZA AND BEER

Pizza to me is like a snowflake – no two are alike. You could order pepperoni from one store and then go to another store and order a pepperoni and they’ll be different.

David trains his staff to be knowledgeable of Halftime’s pizza and beers, so that they are capable of recommending pizza and beer as a pair to their customers. For example David says, “Meat pizza, don’t want to kill it with a floral beer like an IPA, but with an ale, something with caramel where the malt is more roastious.”

One of the biggest things they do to differentiate themselves from other pizzerias is using 00 flour (flour that goes through an extra milling process, that makes the crust more true traditional Italian crust or New York style crust). While many other restaurants use high gluten or all-purpose flour to save costs, Halftime is willing to invest three times the price for a distinctly better dough. “We really respect the craft of pizza making,” David maintains, “We’re in this for the long haul and want to leave a legacy.

HOW TAPHUNTER HELPS

The menu option is so easy to change the beer out and generate a menu without having to do it the old way, where we had an Excel spreadsheet, and go find out the brief description and fit that in there somehow. The logarithm with the menu is pretty awesome. – David

David is able to easily create new menus and load any new beers on tap and new creative pizzas. Furthermore, David markets their promotions and events by using Evergreen’s marketing tools.

Obviously the Events are awesome. We recently started pushing pint nights… we do it on Thursdays. We’re going to start using that tool a lot. – David

Similar to their hometown NBA team, the San Antonio Spurs, HalfTime’s style of making pizza is a team effort that exudes humility and staying humble. In order to become a better leader, David fully understands that he does not know everything and that is ok. The staff are able to see he’s human and makes mistakes, but that he is able to correct them and also learn from them. Evergreen does not exist to take away anyone’s job but to help their jobs easier.
